Let the meal unfold.

Omakase means trusting the chef. At SUGARFISH, that trust begins with a menu designed from the first bite through the last hand roll. There is no need to build an order piece by piece. Choose a Trust Me menu, settle in, and let the courses arrive as intended. Each course is prepared and seasoned in the Nozawa style, so substitutions are not part of the Trust Me format.

Chef Kazunori Nozawa has spent 50 years focused on sushi. That perspective keeps the experience deliberately simple: fish cut to order, warm and loosely packed rice, and seasoning chosen for the piece before it reaches the table.

For a first visit, the format answers the usual question of what to order. Sashimi opens the meal, nigiri builds its rhythm, and hand rolls arrive while the nori is still crisp. The sequence lets you give each course the attention it was made to receive.

Four ways to begin.

Every Trust Me menu moves from sashimi to nigiri to hand rolls. The number and selection of pieces change, but the rhythm of the meal stays focused. Availability and menu items vary by location.

Fish selection for sushi service

Warm rice. Cool fish. Nothing in the way.

The rice is served warm and loosely packed, so its texture and temperature meet the fish at the table. The fish is selected for its place on the menu, then cut and seasoned to be enjoyed without waiting.

That is why each course arrives one at a time. The point is not more choices. It is a better moment for each piece.
