What the menu is designed to do
The course sequence sets the pace
A Trust Me meal starts with sashimi, moves through nigiri, and finishes with hand rolls. Fish is cut to order, rice is served warm, and hand rolls are folded just before serving. That timing is why the meal comes in courses instead of arriving all at once.
