Nigiri, sashimi, and hand rolls have different jobs in the meal

Sashimi gives you the fish on its own. Nigiri brings fish and seasoned rice together in one bite. A hand roll adds nori around the rice and filling, and its crispness is part of the point. Knowing those three formats is enough to follow a Trust Me menu without memorising a glossary.

The timing of each course protects its texture

A good sushi meal is not a test of rules. Still, timing matters. Taste a piece as it arrives, especially if it has already been seasoned. Nigiri is generally easiest to enjoy as one bite when it comfortably fits, while a hand roll is made to be picked up and eaten promptly, before the nori loses its crisp edge.
